The 200-dosa morning: breakfast rush at a tiffin centre

One tawa, two ladles, and a batter drum that empties by ten. Ninety minutes inside the most efficient kitchen in the neighbourhood.

The tawa never rests between 7 and 9.30. The master spreads batter in circles of machine-like consistency — a skill he describes as 'wrist, not arm, and no thinking' — while a second pair of hands runs chutney, sambar and the sacred choreography of plates.

The economics are volume at velocity. Margins per plate are modest; the business lives on the two hundred dosas the tawa produces before mid-morning, plus idlis whose steamer schedule was fixed years ago and has needed no revision since.

The clientele arrives in waves with distinct manners: walkers at seven eating unhurried, office-goers at eight eating standing, and the nine o'clock parcels — office tiffins wrapped in a speed-run of banana leaf and newspaper that regulars film on slow days.

At ten the batter drum scrapes empty and the shutters come halfway down, a signal the lane reads fluently. Tomorrow's batter is already fermenting in the back. 'The dosa is thirty seconds,' the master says, wiping the tawa like a groom polishing a horse. 'The batter is thirty years.'
